Cinnamon Rolls
A family friend recently gave me Peter Reinhart's
Bread Baker's Apprentice. I didn't have a chance to try anything out of it until last weekend, when I was assigned dessert for a dinner. I figured I'd make the cinnamon roll recipe out of it, and I decided to make a giant batch to give away as presents while I was doing it anyway. I was at a friend's house, so this was the first time baking without my mixer in quite a while too!
( Pics Under Here )The frosting recipe is just milk and powdered sugar, but my host was lactose intolerant and didn't have any regular milk! I ended up using the extra buttermilk from making the dough. It came out great with this substitution! I also tried out a tip I got from

annabelle_blue's blog: put dental floss around the rolled dough log and use that to cut the rolls instead of a knife. Worked like a charm!
Several people have told me they don't usually like cinnamon rolls but that these are great. I'm pretty sure it's the dough, which is much lighter and softer than other ones I've tried. I highly recommend this dough for all your rolled pastry bun needs!
